Being that you said this happened when you were driving on a long uphill grade, which means you were under power, and at high speed 60 mph then whatever it is is at its infancy. being that it only happened under power it is most likely something to do with the driveshaft. This is a good thing as other possibilities are more difficult and sometimes more expensive to fix.

Has it only happened that one time? if so then you may need to wait until the problem worsens a bit so you can reproduce it and find the problem. Not being able to reproduce the problem means you wont even know if it is fixed. This kind of issue is not a game stopper. your drive shaft is far from falling off at this point. The issue will get much worse before it falls off. They changed the rear U-Joint, there is still at least 2 more joints on the rear shaft. Altho the front one rarely goes bad becuase there is little angle involved it is poossbile. If you cant find any play in the shaft (not the differential) and you cannot reproduce it then you probably wont be able to do much, unless you like spending money not knowing if it will fix anything, until you can reproduce the problem.

Based on what you have already said, I would wait until you can at least reproduce the problem or it worsens before worriing about it.
